I get asked all the time by non-knife makers what is the best way to sharpen knives? I tell them to get a belt grinder and sharpen them the same way custom knife makers sharpen their knives. This isn't a great answer because they are too expensive for most knife enthusiasts that aren't in the business. Received this on Friday- 4-3-15, couldn't wait to get it out of the box. The first thing I noticed is that it was packaged well and included plenty of documentation/instructions. The belts that come with the tool are perfect for just about all of your sharpening needs. If you want to do ceramic blades, you'll need anther belt, but they are cheap, about $1.75 each or get the assortment.
I first tried it out on a ja henckels 8" kitchen chefs knife. I followed the instructions and had no problem putting an "hair popping" edge on that knife. Then I tried a large Bowie, and a cheap "Ginzu" (the "You seen this on TV knife) and then a capella filet knife, solid sharp edge on all of them...even the Ginzu came back to life, lol.
The real test was a my neighbors Gerber Machete; it had no edge. I used the 80 grit first them the 240. The edge was unreal on that Machete! I now have bragging rights with the boys in the neighborhood.
I took of the blade guides and tried some free hand on a Bowie I'm working on to clean up the bolster and handle from initial forming. This little guy is like a mini belt grinder (well it is actually), all I can say is wow! Really performed well.
All and all, super easy to use and I would recommend this to every one!
